What do you make these pieces with? I can tell that some of them are abalone, but what are the others? Bone, ivory? Does Tagua nut grow in New Zealand? way cool.

Yup abalone, although down there we call it Paua. I also work with mammoth ivory, beef bone, deer antler, teeth from nearly anything, mother of pearl... pretty much what ever I can find. No Tagua nuts in NZ, although there are some similar nuts found on some of the other south pacific islands.

Thinking of doing something similar on the deck of my longboard, but with a bit of a NZ twist.

The guitars take about 20-30 hours, and I do them with sharpies. Although, you'd be dealing with a much different process and medium with boards. I lived in Puerto Rico until I was 13 so I've seen some pretty awesome boards. Fiberglass work definitely takes a professional though. I'm thinking that, if you were gonna use sharpies on it, I would try colors since they would no doubt show up way better on a board. Maybe try to score an old beat up one for test runs till you get a process down. Let me know how it turns out.
